A rich, demi-sec non alcoholic sparkling kombucha, the new amber-hued Iron Goddess has been produced as a seasonal special with a limited release of 1,000 bottles.

Grown in the mountainous region of Fujian province, the exquisite Chinese loose-leaf ‘Tie Guan Yin’ tea, which translates to Iron Goddess of Mercy, is a lightly oxidised oolong tea and one of the most prized teas around the world. Harvested in Autumn, in its original state the golden tea is full and balanced, with a sweet, long-lasting finish, a velvety texture and hints of stone fruits, caramel and toast with a slightly minerally undertone.

Sometimes thought to sit between black and green teas, it is the level of control of both temperature and time in oolong processing that makes this tea so special, where the leaves can be anywhere between 8-80% oxidised. The tea that we use is on the longer end of this, resulting in rich honey and nutty flavours characteristic of our Iron Goddess.

Fermented in stainless steel tanks for over four weeks resulting in deliciously complex flavours – raisin, macadamia and honey on the nose; stewed apple, prune and dried apricot on the palate – and a beautiful butterscotch coloured liquid.

Best served having warmed slightly from the fridge at 8-10 degrees. Iron Goddess is perfect to serve as an aperitif alongside roasted chestnuts, particularly on chilly autumnal evenings. The richly flavoured rounded sweetness is a perfect match for seasonal dishes such as confit duck, lamb tagine, venison with fruit sauces or a warm apple pie.

Storage

REAL Kombucha is a live product, so our drinks need some TLC. On delivery, store them in a cool place (ideally 20ºc or lower), refrigerate before drinking and make sure you consume before the use-by date.
