Breakfast Mar-Tea-Ni

This extraordinary non-alcoholic cocktail, known as the Mar-Tea-Ni, was put together by drinks author and mixology legend, Dan Whiteside (you can find him on Insagram as @danwhitesidedrinks). His book, Mixed In Minutes, will be published in October 2021 and it aims to teach you how to create bar-quality cocktails without any intimidating terms or paraphernalia. Prior to becoming a writer, Dan created drinks menus for Richard Caring’s restaurant empire, as well as running some of the world’s best cocktail bars, from London to New Zealand.


Dan Whiteside originally posted this recipe on his Instagram channel. Here’s what he had to say…

“This drink is a super simple twist on a breakfast martini. Everleaf forest, orange and lemon juices, marmalade syrup, lengthened with REAL Royal Flush kombucha. Garnished with dried edible tea leaves and marmalade on toast.”



Time and serving

  • Prep time – 10 mins
  • Make time – 2 mins
  • Serves – 1




*For the syrup, add two heaped tablespoons/100g of marmalade and 50ml water into a pan. Heat while stirring occasionally until the marmalade has melted. Leave to cool, decant and store in the fridge.




  1. Blend all the ingredients besides the kombucha for 5 seconds to mix and aerate. If you don’t have a blender, dry shake.
  2. Pour into a coupe or wine glass, slowly top with the kombucha.
  3. Garnish with edible dried petals, or loose leaf tea.
