Socca pancakes with broccoli, chilli and cream cheese – REAL Chefs with Steve Groves

Steve was crowned MasterChef : The Professionals Winner in 2009. In 2010 he joined Roux at Parliament Square and subsequently became Head Chef in 2013. Prior to this Steve worked at Launceston Place and The Inn at Perry cabin in the United States. In 2019 Steve won The Craft Guild of Chefs National Chef of the Year.

Socca pancakes with broccoli, chilli and cream cheese – recipe

These pancakes can be enjoyed really simply with just some olive oil and sea salt, or to make it more of a meal they can be topped (as I have done here). Feel free to mix up the toppings based on what you have or can get hold of. A different cheese, some basil instead of the wild garlic, or even a bit of pesto… if that’s something you have in the fridge.

Serves 2

Socca pancakes

  • 120g Chick pea (Gram) flour
  • 240ml Water
  • 1 Clove garlic crushed
  • 1tbsp olive oil
  • Salt and pepper

Mix all of the ingredients together to form a smooth batter.

Heat a non stick frying pan over a high heat, add a little oil then wipe out with some kitchen paper. Pour in some batter to cover the base of the pan and cook until set and golden brown on the underside, flip over and colour on the second side. Remove from the pan and repeat with the remaining batter.

Broccoli mixture

  • 1 small head of broccoli or half a large one, cut into small florets
  • 1 Red chilli
  • 1tbsp olive oil
  • a few leaves of three cornered or wild garlic, cut into 5cm pieces

Heat the olive oil in a frying pan and add the broccoli, season and cook until lightly coloured, add the chilli and continue to fry for a minute or so. Add water to come around 2/3 of the way up the broccoli, turn the heat to high and cook until all of the water is evaporated. The broccoli should be cooked but retain some bite. Add the garlic leaf and cook briefly to just wilt.

Cream cheese

  • 100g light cream cheese
  • a few leaves of three cornered garlic
  • Salt and pepper

Thinly slice the three cornered garlic then mix with the cream cheese and season.
