Why is Sparkling Tea The Ideal Alternative for Alcohol?
The art of fermenting tea has been around for thousands of years and uses a similar process to the fermentation of grapes to make wines.
At REAL we have worked closely with winemakers, Champagne makers, breweries, and microbiologists from around the world to make anon-alcoholic offerings using some of the very best tea fermentation in the world. Our sparklings are unique in that they are unflavored. We ferment exquisite, loose-leaf teas from small gardens in China and India to produce a delicious non-alcoholic sparkling without the need for added flavour, making our drinks the perfect base for any cocktail!
The Best Non-Alcoholic Cocktails
We believed that just as good winemakers and breweries never add flavourings to their products, sparkling tea can be made in the same way. At REAL we rely on the fermentation process to work on the character notes of our loose-leaf teas and draw out delicious floral or fresh notes, rather than adding flavourings.
As a result, our drinks work well when combined with other, stronger flavours; the subtle acidity and astringency complement syrups and non-alcoholic spirits or aperitifs perfectly.
Non-Alcoholic Breakfast Martini
Royal Flush is a great place to start when thinking about creating non-alcoholic cocktails. Its soft and delicate aroma combined with light effervescence makes it perfect to mix with sweeter ingredients. Fermented from First Flush Darjeeling tea, Royal Flush offers notes of rhubarb, white peach, and a touch of blackcurrant giving you that sweet touch throughout a cocktail. This Breakfast Mar-Tea-Ni, courtesy of mixology legend Dan Whiteside, is the perfect twist on a simple Breakfast Martini.
You will need:
- 75ml REAL Royal Flush
- 50ml Everleaf Forest
- 15ml Marmalade syrup
- 15ml Fresh chilled lemon juice
- 20ml Fresh chilled Orange Juice
Pour the Everleaf Forest, marmalade syrup, lemon juice, and orange juice into a glass and mix. Top with REAL Royal Flush and serve!
If you’re looking for a real showstopper and want to test your mixology skills, our Sustained Melody spritz is the one for you! While this cocktail takes a little longer to make, we believe that good things come to those who wait and that this spritz is so worth it. Crafted by Bourne & Hollingsworth who run most of London’s most vibrant events, this is a pleasure for the senses. Most of the preparation can be done before guests arrive, saving you time while entertaining but enabling you to make a winning cocktail that will leave everyone impressed. Once you’ve made the Three Citrus Sherbet, the cocktail takes just two minutes to put together and serve.
For the Three Citrus Sherbet recipe…
- 1x pink grapefruit peel
- 2x lemon peels
- 300g sugar
- 150ml pink grapefruit juice
- 250ml lemon juice
- 200ml lime juice
- 1x tablespoon honey
- 100ml water
Combine the ingredients for the sherbet in a saucepan, heat until dissolved, and leave to cool for around four hours before straining.
For the Sustained Melody cocktail:
- 2x tonka bean droplets (which can be bought online)
- 2x drops of saline solution
- REAL Dry Dragon top
- 40ml Seedlip Spice 94
- 30ml Three Citrus Sherbet
Add ice to a wine glass, and add the ingredients one at a time, stirring gently. Top with Dry Dragon and serve. An ideal non-alcoholic spritz that won’t disappoint!
